 Ko Hong. "hong" being the word for "sea cave". The entrance to these hongs is usually a well-hidden little crevice in the cliff-face; a narrow tunnel opening up into an awe-inspiring oasis on the interior.

Prevailing wind conditions, one of the greatest things about being on a sailboat is the flexibility to change our minds and our route to suit personal preferences. No two trips are ever exactly the same. The start and finish points are fixed, of course but all else is changeable according to the whims of the wind gods and those on board !

Day One 

Morning rendezvous in Phuket. Then sail time arrives where we will head north - to the wonderful "seascapes" of Phang-Nga bay! The entrance to these hongs is usually a well-hidden little crevice in the cliff-face; a narrow tunnel opening up into an awe-inspiring oasis on the interior. The limestone formations are so sheer and gravity-defying

Our destination for the evening is Ko Hong. Happy hour with the best pina coladas in the Andaman! - followed by our very own Thai chefs' gourmet dinner on board; an amazing array of tongue-tingling dishes

Day Two

We're heading south on a relaxed morning sail. We'll see more impossibly-balanced rocks, cliffs & islands. The delight today will be another hong to explore en route, paddling through a dramatic, mangrove-lined stream which winds its way inside a huge crevice in the island.

With sheer, palm-covered mountains rising vertically from the ocean, it's a well-known spot for those who like to scare themselves silly scaling these cliffs.  At the famous Railey Beach, near Krabi,  is where we'll anchor.

Day Three

Not a "tourist destination" - it's a place that the locals visit to pay their respects to the monk community there. This place is not as overtly dramatic and ornate as some of the more well-known: what attracts us is it's deeply spiritual, calm Buddhist ambiance.

Welcome to Tiger Cave and Temple , a 30 minute minibus ride inland.

 You will find a shady hike through an enormous and ancient forest.

The Greek, Roman, Arabs, Normans, Spanish and British – all in some way left their mark and in modern day Sicilian cooking it is very evident. "Discovering Sicilian cookery is like discovering Sicilian history".

The cooking courses are based at the enchanting Villa Sicily. It is 8 days and 7 nights booked on a private estate that dates back to 1848 with luxurious bedrooms. All modern with views of either the sea or of the Sicilian countryside. 

Imagine waking up to clear blue skies each morning with breakfast served to you outside while you gaze dreamily upon the the sea.

For your pleasure you will find an outdoor pool surrounded by almond and olive trees, with a terrace where you can relax and enjoy the soft breeze coming in off of the sea.

Your Itinerary:
Day 1
Our Flavours transfer will meet you at Catania Airport and take you to the villa where you can enjoy welcome drinks and dinner prepared by our local chef.
Day 2
After breakfast, your first cookery lesson with our local chef, followed by lunch. You are free in the afternoon to relax at the beautiful Villa Aragonese. Dinner is served at the villa
Day 3
Today you will visit a local winery and enjoy a private tour, wine tasting, followed by lunch. In the late afternoon take part in your second hands-on cookery lesson, followed by dinner.
Day 4
Visit the coastal town of Siracusa and take a wander through its ancient streets. You and your fellow guests will have lunch at a local trattoria. Next, travel to Noto to taste the local ice cream at a traditional gelateria. Tonight’s dinner will be at Villa Aragonese. Please note the itinerary is subject to change depending on the weather and allowing for the Italian ways!
Day 5
After breakfast, enjoy another hands-on cookery lesson followed by lunch at the villa. This afternoon is free to relax by the pool. Dinner this evening is at the villa.
Day 6
Another cookery lesson this morning before heading to Modica to taste its famous chocolate. The afternoon will be spent exploring the stunning town of Ragusa and have an evening meal at our favourite local restaurant.
Day 7
Following breakfast, enjoy your final cookery lesson and then lunch.  You will be free to relax for the afternoon at the villa.  In the evening, the chef will prepare your farewell meal at the villa.
Day 8
After breakfast, we will transfer your back the airport. Depending on travel times, we may take the opportunity to stop off and explore Catania before your flight home.

Visit The Historic Jamestown Settlement In Williamsburg, Virginia

Let’s Travel back in time with a visit to the Jamestown Settlement, where we can explore replicas of the ships that brought the English colonists to Virginia. We can also relive the days of the early 17th century by entering into the life size re-creation of a military fort and a Powhatan village.


You see, thirteen years before the Pilgrims made their voyage to America, 104 English men and boys made a home on the banks of Virginia’s James River. The Virginia Company of London wanted to make a profit from whatever resources the “New World” may bring, and therefore funded the voyage of these men in 1607. After suffering through many hardships, the men and boys were able to survive and became America’s first permanent English colony.

There will be film shown: 1607: A Nation Takes Root, it tells the story about the evolution of the Virginia Company. The film does a fine job of explaining the relationships of the English colonists with the native Powhatan Indians and the arrival of the first Africans in 1619. 



After the film, wander down to climb aboard and explore the replicas of the three ships that brought the colonists to Virginia. The Susan Constant, the Godspeed and the Discovery are moored at Jamestown Settlement’s pier, and you can explore all three re-creations, try steering with a whip staff or a tiller and even climb into a sailor’s bunk.

Solo Traveler Mediterranean Cooking Vacation

Sorento, Amalfi Coast


Birthplace of the pizza and Sophia Loren, one hour south of the intensity of Naples, Sorento is serene and an ideal spot for a culinary vacation. It is a perfect home base to the much sought after Amalfi Coast. "This week-long Amalfi culinary vacation will take you from the posh island of Capri to the ancient ruins of Pompeii, and the cobblestoned medieval streets of Amalfi at the cliff's base. An expanse of precarious road will take you between villages, running through lush greenery and vineyards nestled in the folds of the jagged cliffs."

The lovely four-star relais hotel of only seven rooms and five suites that is situated on one of the hills of Sant' Agata sui due Golfi. Recently restored, the villa was originally built in 1892. The grounds include a swimming pool with a jacuzzi and sauna, tennis court and exercise room. With it's own  wine bar with incredible premium wines from Italy kept in a special made wine cave. The outdoor dining, lush vegetation and the cantina complete with Cuban cigars in the main building. All of this a long with it's own breathtaking private beach adds up to a perfect most memorable, relaxing vacation!

Vacation Day 1 
Our Amalfi cooking staff will meet you at Naples Airport (1 hour 30min) and take you to the villa for welcome drinks on the terrace followed by dinner prepared by our local chef.
Vacation Day 2
After breakfast you have your first cooking lesson with the chef, enjoying the results for lunch. The afternoon is free to enjoy as you wish. Dinner is prepared for you at the villa.
Vacation Day 3
After breakfast you visit Capri. Get the boat from Amalfi harbour (60 minutes). Enjoy a day sightseeing or shopping at leisure. Lunch will be at an excellent local “trattoria”. Return to villa late afternoon (17pm last boat) for dinner.
Vacation Day 4
Enjoy your second hands-on cooking lesson this morning after breakfast and then lunch. In the afternoon, visit a Mozzarella di Bufala producer and private tasting.On the way back views of Amalfi coast from panoramic street. Return to the villa for dinner prepared by the chef.
Vacation Day 5
Another cookery lesson this morning and then lunch. The afternoon is yours to relax by the pool or enjoy the breathtaking view of the Amalfi Coast landscape. Dinner tonight is at the villa.
Vacation Day 6
This morning is your fourth cookery lesson, followed by lunch. The afternoon will be spent in Positano and Sorrento with a chance to explore and do some shopping before dinner at a local restaurant..
Vacation Day 7
After breakfast you have your final cookery lesson and lunch. Enjoy your last afternoon relaxing at the villa and in the evening a special farewell dinner prepared by your chef.
Vacation Day 8
After breakfast and some time to relax, our transfer will collect you and take you back to Naples Airport for your flight home.
